Ok. I got a little out of control with this.
Don’t be overwhelmed. I didn’t put flax in it.
I did however make a delicious bread that tastes less like peanut butter than expected and used whole wheat flour. Wooza.
Sorry there is a joke of an amount of ingredients in this.
Quick breads are nice because they almost always turn out delicious (the chocolate chips guarantee that) so go crazy.
You like cinnamon. Do you. Add it.
I should mention I baked with a dog on my hands. She was Bailey. On loan from a friend.
She liked chocolate chips.
Mini Chocolate Chip Banana Bread Recipe
- 2 c. unsifted flour (I used half whole wheat)
- 1½ c. granulated sugar
- ½ tsp. baking powder
- 1 tsp baking soda
- ¾ tsp. salt
- ½ tsp. cinnamon
- 1 – 1 ½ c. mini chocolate chips
- 1/2 c. Organic Peanut Butter
- 1 c. mashed overripe bananas
- 2 large eggs
- 1/3 c. buttermilk
- ½ c. vegetable oil
- 1 tsp. pure vanilla extract
Preheat overn to 350.
Grease and flour three mini loaf pans.
Sift together flour, sugar, baking powder, baking soda, cinnamon and salt into large bowl. Stir in mini chocolate chips.
In a separate bowl, combine peanut butter, mashed bananas, eggs, buttermilk, oil and vanilla. Pour liquid ingredients into flour ingredients and stir until combined.
Divide batter among loaf pans and bake for 33-35 minutes or until deeply golden brown and toothpick inserted into center comes out clean.
