My rainy pre-finals week required something bright that said summer more than this weather.
This recipe was so so simple. I looked up at least 3 before it and this one made the most sense.
Sugar, lemon, eggs, sunshine.
Ok, well I will not mention how I forgot the salt and lemon zest in the crust until I had already stuck it in the oven.
I will mention however this recipe has the filling doubled because the original amount was bogus.
Luscious Lemon Bars
adapted from The Bake Sale Cookbook
2 c flour
1 c butter (organic)
1/2 cup powdered sugar
4 tsp lemon zest (organic)
1/4 tps salt
2 c sugar
6 eggs (organic)
2/3 c lemon juice (this is the cook book measurement I just did 5 lemons)
Preheat oven to 350, grease 13 x 9 inch pan
Mix (with you hands, get ’em, dirty) flour, butter, powdered sugar, lemon zest and salt
Press into pan, bake until golden brown, about 20 minutes
In the meantime mix up eggs, sugar, and juice
Pour over the cooked crust and pop back in the oven for 20 or until set
Powdered sugar those puppies
